This is weird enough to otherworldly. First off - it is in use in North America (not Europe). The "meat glue" is made from slaughterhouse blood (cow, pig together) and/or microbial agents that may or may not be safe to eat. When bits are glued together, the glued edges often don't cook thoroughly and so food poisoning is a distinct possibility.
Ever wonder how McScary could provide "chicken breasts" at the price they do? Think chicken scrap re-formed breasts.
I already know that the "mock crab" that is in so many sushi products is bound together with meat plasma. (That surprised a lot of people who didn't know they were eating pig and beef bood.) Now it seems that any tenderloin, or eye of, or rolled roast is probably glued if its from a major butcher outlet.
Another reason to buy locally. I'm going to be asking at my usual supermarket if they sell "glued meat". The thing is THEY AS I MIGHT NOT KNOW. There is no taste difference (brrrrr) and it looks good. It glues so well that the meat DOESN 'T COME APART at the glue seam.
Bon Appetit
